Brazilian Bulgur Stir Fry
A spicy and light Brazilian-inspired stir fry made with bulgur and a variety of vegetables.

- β1 cup bulgurpreferably whole wheat
- β1 medium onion
- β1 medium bell pepper
- β2 medium tomato
- β1 tsp cumin
- β1 tsp chili powder
- βto taste salt
- βto taste black pepper
- β2 tbsp spicy stir fry sauceoptional

Instructions

Heat oil in a large skillet over medium-high heat.

Add onion and bell pepper and stir-fry until tender.

Add cumin, chili powder, salt, and black pepper, and stir-fry for 1 minute.

Add tomato and bulgur, and stir-fry for 2 minutes.

If using spicy stir fry sauce, add it now and stir-fry for 1 minute.
