Pandan Sweet Fritters
A Malaysian-inspired dessert featuring crispy fritters filled with sweet pandan custard. Serve warm and enjoy!
Ingredients
- β2 Pandan leaves
- β1 cup Sweet coconut milk
- β2 cups Sticky rice flour
- β1/2 cup Sugar
- β2 Eggs
- β1/2 cup Vegetable oil
- β1/4 tsp Salt

Combine pandan leaves, coconut milk, and 1/4 cup sugar in a blender. Blend until smooth.

In a large bowl, whisk together rice flour, remaining sugar, eggs, and salt.

Add the blended pandan mixture to the dry ingredients and mix until a smooth batter forms.

Heat oil in a deep frying pan over medium-high heat.

Using a spoon, drop small amounts of the batter into the hot oil.
