Tangy French Omelette

- β1/4 cup tangy vegan cheeseSliced or crumbled
- β1 tsp french herbsDried or fresh
- β1 clove garlicMinced
- β1/2 cup spinachChopped
- β1 tsp lemon juiceFreshly squeezed

Instructions

In a small non-stick pan, heat 1 tsp of oil over medium heat.

Add the minced garlic and cook for 1 minute.

Add the chopped spinach and cook until wilted.

In a separate bowl, whisk together the flaky omelette and a pinch of salt.
