Thai Herbal Chicken Bowl
A flavorful and nutritious Thai-inspired bowl dish made with herbal notes and a hint of tanginess.
Ingredients
- β1 pound, cut into bite-sized pieces chicken breastboneless
- β1/4 cup, chopped Thai basil
- β2 stalks, bruised lemongrass
- β2 inches, sliced ginger
- β2 cups chicken broth
- β1 cup coconut milk
- β2 tablespoons fish sauce
- β1 tablespoon brown sugar
- β1 cup, cooked ricefor serving

Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned, about 5 minutes.

Add lemongrass and ginger to the skillet and cook for 1 minute.

Pour in chicken broth and bring to a boil. Scrape up any browned bits from the bottom of the skillet.

Reduce heat to low and simmer for 10 minutes.

Stir in coconut milk, fish sauce, and brown sugar. Cook for an additional 2 minutes.

Cooked rice should be prepared according to package instructions.

To assemble the bowls, place a scoop of cooked rice in the bottom of a bowl.
