Tangy Udon Casserole
A fusion of Indian and Canadian flavors, this tangy udon casserole is a unique twist on traditional dishes.
Ingredients
- β250g udon noodlespreferably Japanese udon noodles
- β2 tbsp vegetable oilfor greasing the casserole dish
- β1 medium onionfinely chopped
- β2-inch piece gingergrated
- β250g canned tomatoescrushed
- β2 tbsp tangy sauceavailable at most supermarkets
- β100g cheddar cheeseshredded
- β1 casserole dishfor assembly

Preheat the oven to 180Β°C (350Β°F).

Cook the udon noodles according to package instructions. Drain and set aside.

In a pan, heat 1 tbsp of vegetable oil over medium heat. Add the chopped onion and cook until softened.

Add the grated ginger and cook for 1 minute.

Add the crushed canned tomatoes, tangy sauce, and cooked udon noodles to the pan. Stir well to combine.

Transfer the mixture to a greased casserole dish.

Top with shredded cheddar cheese.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
