Uruguayan Lamb Stew
A hearty and flavorful stew originating from Uruguay, made with tender lamb and a blend of spices.
Ingredients
- β1.5 lbs Lamb shouldercut into 2-inch cubes
- β1 cup Tangy red wineUruguayan red wine
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 large Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β2 tbsp Tomato pastedried
- β2 tbsp Olive oilfor browning
- β1/4 cup Fresh parsleychopped

Heat oil in a large Dutch oven over medium-high heat.

Brown the lamb cubes in batches until browned on all sides. Set aside.

Add more oil if needed, then cook the onion and garlic until softened.

Add the carrots and potatoes, cooking for 5 minutes.

Add the tomato paste, cooking for 1 minute.

Add the browned lamb, red wine, and enough water to cover. Bring to a boil.

Reduce heat to low, cover, and simmer for 2 hours or until lamb is tender.

Season with salt and pepper to taste.
