Black Pudding Eton Mess
A British dessert twist on the classic Eton Mess, featuring black pudding and a variety of sweet and savory flavors.
Ingredients
- β8 oz (225g) Black Pudding
- β1 cup (120g) Fresh Berries
- β1 cup (240ml) Heavy Cream
- β2 tbsp (30g) Granulated Sugar
- β1/4 cup (15g) Mint Leaves
- β4-6 pieces Crisp Muffins (Eton Mess style)
- β2 tbsp (30g) Unsalted Butter
- β1 tsp (5g) Brown Sugar

Preheat the oven to 400Β°F (200Β°C).

Cut the black pudding into small pieces and toast in the oven for 5-7 minutes, or until lightly browned.

In a large bowl, whip the heavy cream until soft peaks form.

Add the granulated sugar and whip until stiff peaks form.

Fold in the toasted black pudding and chopped mint leaves.

In a separate bowl, crush the crisp muffins into small pieces.

Add the crushed muffins to the cream mixture and fold until well combined.
