Mexican Roast Chicken Tacos
A flavorful and spicy dish featuring roasted chicken, served in tacos with your choice of toppings.

- ●2 Roast American pepper
- ●2 cloves Tender garlic
- ●1 teaspoon Mexican oregano
- ●2 tablespoons Lime juice
- ●1/2 teaspoon Cumin
- ●1/4 teaspoon Cayenne pepper

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the lime juice, cumin, cayenne pepper, and oregano.

Rub the mixture all over the chicken, then place it in a baking dish.

Roast the chicken in the preheated oven for 25-30 minutes, or until it reaches an internal temperature of 165°F (74°C).

While the chicken is cooking, heat a large skillet over medium-high heat.

Add a tablespoon of oil to the skillet and sauté the diced peppers until they are tender.

Once the chicken is done, let it rest for 5 minutes before slicing it thinly.
