Slovakian Pork Stew
A hearty German-inspired stew made with tender pork and Slovakian flair.
Ingredients
- β1 pound Pork shouldercut into 1-inch cubes
- β1 pound Slovakian sausagesuch as kovbasa
- β1 medium Oniondiced
- β2 medium Carrotpeeled and sliced
- β2 large Potatopeeled and cubed
- β2 cups Beef brothlow-sodium
- β2 tablespoons Tomato paste
- β1 teaspoon Dried thyme
- βto taste Salt and pepper

Heat the oven to 300Β°F (150Β°C).

In a large Dutch oven, brown the pork cubes over medium-high heat.

Remove the pork from the pot and set aside.

Add the sliced onion to the pot and cook until softened, about 5 minutes.

Add the sliced carrots and cook for an additional 5 minutes.

Add the cubed potatoes, beef broth, tomato paste, and dried thyme to the pot.

Return the browned pork to the pot and bring to a boil.

Cover the pot with a lid and transfer to the preheated oven.

Bake for 2 1/2 hours, or until the pork is tender and the potatoes are cooked through.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh parsley if desired.
