Sweet Middle Eastern Fish Ganoush
A flavorful and healthy Middle Eastern-inspired dish featuring tender fish with a sweet and creamy ganoush sauce.
Ingredients
- β4 fillets Fish (cod or tilapia)
- β2 medium Sweet potatoespeeled and chopped
- β1/2 cup Tahini
- β2 tablespoons Lemon juice
- β2 cloves Garlicminced
- β1/4 cup Olive oil
- βto taste Salt and pepper
- βchopped (optional) Fresh parsley

Preheat oven to 400Β°F (200Β°C).

Season the fish with salt and pepper. Place on a baking sheet lined with parchment paper.

Drizzle the fish with olive oil and bake for 12-15 minutes, or until cooked through.

While the fish is baking, prepare the ganoush sauce. In a blender or food processor, combine the sweet potatoes, tahini, lemon juice, garlic, and salt and pepper to taste.

Blend until smooth and creamy. Taste and adjust the seasoning as needed.

Once the fish is done, remove it from the oven and top each fillet with a spoonful of the ganoush sauce.

Garnish with chopped fresh parsley, if desired.
