Tender Barbacoa Casserole
A twist on traditional Indian cuisine, blending tender meat with Oaxacan style flavors and textures.
Ingredients
- β1 lb Oaxacan-Style Barbacoa MeatCut into 1-inch pieces
- β1 lb Ultra-Tender Chicken BreastCut into 1-inch pieces
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 tsp CuminGround
- β1 tsp CorianderGround
- β1 tsp Garam MasalaGround
- β1/4 tsp Cayenne PepperOptional
- β2 tbsp Tomato PasteOptional
- β1/4 cup Heavy CreamOptional

Preheat oven to 375Β°F (190Β°C).

Season the meat with cumin, coriander, garam masala, and cayenne pepper (if using).

Heat 2 tbsp of oil in a large skillet over medium-high heat. Cook the meat until browned, about 5 minutes.

Add the onion and garlic to the skillet and cook until the onion is translucent, about 3 minutes.

Add the tomato paste (if using) and cook for 1 minute.

Transfer the skillet mixture to a 9x13 inch baking dish.

Arrange the tender chicken breast on top of the meat mixture.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and top with heavy cream (if using). Bake for an additional 10-15 minutes, or until the chicken is cooked through.
