Spicy Chicken Stew
A hearty and flavorful stew from Saudi cuisine, packed with the heat of spicy ingredients and the richness of umami flavors.
Ingredients
- β1 1/2 pounds boneless, skinless chicken breast or thighs chicken
- β2 tablespoons soy sauce umami
- β2 medium onions stew
- β3 cloves garlic stew
- β1 medium red bell pepper stew
- β1 teaspoon ground cumin spicy
- β1/2 teaspoon cayenne pepper spicy
- β1 teaspoon ground cinnamon saudi
- β1/2 teaspoon ground cardamom saudi
- β2 cups chicken broth water

Heat oil in a large pot over medium-high heat.

Add chicken and cook until browned, about 5-6 minutes.

Remove chicken and set aside.

Add onions, garlic, and red bell pepper to the pot, and cook until the vegetables are softened, about 5 minutes.

Add cumin, cayenne pepper, cinnamon, and cardamom to the pot, and cook for 1 minute.

Add chicken broth and soy sauce to the pot, and bring to a boil.

Return chicken to the pot, and reduce heat to low.

Simmer, covered, until chicken is cooked through, about 20-25 minutes.
