Jamaican Sweetcorn Stew
A hearty and flavorful stew made with sweetcorn, Jamaican seasonings, and tender beef. Perfect for a cold winter's night.
Ingredients
- β1 pound beef (1 pound)chuck or round work well
- β3 ears sweetcorn (3 ears)
- β1 medium onion (1 medium)
- β3 cloves garlic (3 cloves)
- β2 teaspoons allspice (2 teaspoons)
- β1 teaspoon thyme (1 teaspoon)
- β2 bay leaves (2)
- β1 tablespoon jamaican jerk seasoning (1 tablespoon)
- β2 cups beef broth (2 cups)
- β2 tablespoons tomato paste (2 tablespoons)

Heat oil in a large Dutch oven over medium-high heat. Sear the beef until browned on all sides, then set aside.

Add the onion and garlic to the pot and sautΓ© until softened.

Add the allspice, thyme, bay leaves, and jerk seasoning to the pot and cook for 1 minute.

Add the beef broth, tomato paste, and browned beef to the pot. Bring to a boil, then reduce heat to low and simmer for 2 hours.

Add the sweetcorn to the pot and continue to simmer for an additional 30 minutes.
