Crispy Peruvian Lentil Stew
A hearty and flavorful stew featuring crispy peruvian-style lentils, served with a side of crusty bread.
Ingredients
- β1 cup dried Lentils
- β2 tablespoons Vegetable oil
- β1 medium Onion
- β3 cloves Garlic
- β1 teaspoon Cumin
- β1/2 teaspoon Chili powder
- β1/2 teaspoon Salt
- β1/4 teaspoon Black pepper
- β1/2 teaspoon Unique spice blend
- β4 slices Crusty bread

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic, cumin, chili powder, salt, and black pepper. Cook for 1 minute.

Add lentils, unique spice blend, and 4 cups water. Bring to a boil.

Reduce heat to low and simmer for 20-25 minutes, or until lentils are tender.

Preheat oven to 400Β°F (200Β°C).

Cut crusty bread into 1-inch cubes and place on a baking sheet.

Drizzle with oil and toss to coat. Bake for 5-7 minutes, or until crispy.
