Eggplant Zaalouk Italian Skillet
A unique Italian twist on the traditional Moroccan eggplant zaalouk dish, featuring eggplant, eggplant puree, and Italian seasonings.
Ingredients

Heat the olive oil in a large skillet over medium-high heat.

Add the unique, tomato paste, moroccan, salt, and black pepper. Stir to combine.

Reduce heat to medium-low and simmer for 10-15 minutes, stirring occasionally.
