Slovakian Butternut Squash Stew
A hearty and comforting Slovakian-inspired stew made with roasted butternut squash and a blend of aromatic spices.
Ingredients
- β1 large, peeled and cubed butternut squash
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β1 tsp caraway seeds
- β1 tsp dried thyme
- β2 dried bay leaves
- β4 cups vegan vegetable broth
- β2 tbsp apple cider vinegar

Preheat oven to 400Β°F (200Β°C).

Toss the cubed butternut squash with 1 tbsp of oil and season with salt and pepper. Spread on a baking sheet and roast for 30 minutes.

In a large pot, heat 2 tbsp of oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the caraway seeds, thyme, and bay leaves. Cook for 1 minute.

Add the roasted butternut squash, vegetable broth, and apple cider vinegar. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
