Lamb Tagine
A traditional North African stew made with tender lamb and flavorful spices, served over couscous.

Ingredients
- β 1 pound lamb shoulder, cut into 2-inch pieces
- β 2 tablespoons olive oil
- β 1 onion, chopped
- β 2 cloves garlic, minced
- β 1 tablespoon ground cumin
- β 1 teaspoon ground coriander
- β 1 teaspoon ground cinnamon
- β 1/2 teaspoon ground cayenne pepper
- β 1/2 teaspoon salt
- β 1/4 teaspoon black pepper
- β 2 cups lamb or beef broth
- β 2 tablespoons chopped fresh parsley
- β 2 tablespoons chopped fresh cilantro

Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add lamb and cook until browned on all sides, about 5 minutes.

Add cumin, coriander, cinnamon, cayenne pepper, salt, and black pepper. Cook for 1 minute.

Add broth and bring to a boil.

Reduce heat to low and simmer, covered, until lamb is tender, about 1 1/2 hours.

Stir in parsley and cilantro.
