Citrusy Pilaf with Velvety Sauce

- β2 tablespoons Oil
- β1 small Onionchopped
- β1 tablespoon Citrus zestfrom 1 orange
- β2 cups Vegetable broth
- β1 cup Velvety saucesee below for velvety sauce ingredients

Instructions

Heat oil in a large saucepan over medium heat.

Add chopped onion and cook until translucent, about 5 minutes.

Add citrus zest and cook for 1 minute.

Add pilaf and stir to coat with oil mixture.

Add vegetable broth and bring to a boil.

Reduce heat to low, cover, and simmer for 20 minutes.

Meanwhile, prepare velvety sauce (see below).
