Irish Barley Casserole
A hearty, comforting Italian-inspired casserole with a twist of Irish flair. Velvety and rich, it's perfect for a chilly evening.
Ingredients

- ●2 cups Irish Velvetychopped, 1 cup of which is the velvety sauce, 1 cup other chopped ingredients
- ●1 cup Casserolecanned, diced tomatoes
- ●1 medium Onionchopped
- ●3 cloves Garlicminced
- ●1 cup Mozzarellashredded
- ●2 tbsp Olive Oil
- ●to taste Salt
- ●to taste Black Pepper
- ●1 tbsp Fresh Basilchopped

Preheat oven to 375°F (190°C).

Cook the barley according to package instructions.

In a pan, heat the olive oil and sauté the onion and garlic until softened.

Add the Irish Velvety mixture and cook for 5 minutes, stirring occasionally.

Stir in the diced tomatoes, salt, and black pepper.

Combine the cooked barley, the pan mixture, and the mozzarella cheese in a 9x13 inch baking dish.

Transfer the dish to the oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

Remove the dish from the oven and sprinkle with chopped fresh basil.
