Slovakian Beef Stew
A hearty and comforting beef stew originating from Slovakia, made with tender beef, velvety potatoes, and a hint of lime.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β1 medium onionchopped
- β2 medium carrotspeeled and chopped
- β2 large potatoespeeled and cubed
- β1/2 cup velvety potatoesfinely chopped
- β2 tablespoons lime juicefreshly squeezed
- β1 teaspoon slovakian paprikasmoked
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 3 minutes.

Add the chopped carrots and cook for an additional 2 minutes.

Add the cubed potatoes, browned beef, slovakian paprika, salt, and black pepper to the pot.

Stir to combine, then add the chopped velvety potatoes and lime juice.

Bring the stew to a boil, then cover and transfer to the oven.

Bake at 300Β°F (150Β°C) for 2 1/2 hours, or until the meat is tender.
