Uruguayan White Bean Stew

- β1 cup, dried White beansRinse and soak overnight
- β1 cup, dried Navy beansRinse and soak overnight
- β2 medium OnionChopped
- β2 medium CarrotChopped
- β2 stalks CeleryChopped
- β3 cloves GarlicMinced
- β2 tablespoons Tomato pasteDried
- β4 cups Vegetable brothHomemade or store-bought
- β1 teaspoon Dried oreganoDried
- β1 teaspoon SaltOptional

Heat oil in a large pot over medium heat.

Add chopped onion, carrot, and celery. Cook until softened, about 5 minutes.

Add soaked and rinsed white and navy beans, vegetable broth, dried oregano, and salt (if using).
