Mexican Street Corn Grilled Chicken
A flavorful and colorful dish that combines the smokiness of grilled chicken with the sweetness of corn, all seasoned with vibrant and spicy Mexican flavors.
Ingredients
- β4 boneless, skinless chicken breasts1 pound
- β4 corn on the cobfresh and husked
- β2 tablespoons elote seasoning
- β2 tablespoons lime juice
- β1/4 cup brinechicken brine or substitute with kosher salt and water
- β1 tablespoon mexican dry blendor substitute with chili powder and cumin

1. Preheat grill to medium-high heat.

2. In a small bowl, whisk together elote seasoning, lime juice, and brine.

3. Place chicken in a large bowl and pour the marinade over it.

4. Toss chicken to coat and let it marinate for at least 30 minutes.

5. Grill chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165Β°F.

6. Grill corn for 10-12 minutes, turning every 2-3 minutes, or until slightly charred.
