Creamy Thai Curry Bowl
A flavorful and aromatic bowl filled with creamy Thai curry, served over a bed of steamed rice.
Ingredients
- β2 tablespoons Thai Red Curry Pastemake sure to use a vegetarian curry paste
- β1 can Coconut Milkfull-fat coconut milk for creaminess
- β1 tablespoon Vegetable Oilfor sautΓ©ing
- β1 Red Bell Peppersliced
- β1 medium Onionchopped
- β1/4 cup Thai Basilchopped, for garnish
- β2 cups Steamed Jasmine Ricefor serving

Heat the vegetable oil in a large skillet over medium heat.

Add the sliced red bell pepper and cook for 3-4 minutes, until tender.

Add the chopped onion and cook for an additional 2-3 minutes, until translucent.

Add the Thai red curry paste and cook for 1-2 minutes, until fragrant.

Pour in the coconut milk and stir to combine.

Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce has thickened.
