Hearty Dutch Bean Stew
A comforting and flavorful stew made with tender beans and rich dutch flavors.
Ingredients
- β1 pound Dutch sausage, slicedlook for a vegetarian alternative if needed
- β1 can Cannellini beans, drained and rinsedor 1 cup cooked from scratch
- β2 Vividly colored bell peppers, sliced
- β1 teaspoon Flaky sea salt
- β1/2 teaspoon Black pepper, ground
- β1 medium Onion, chopped
- β2 cloves Garlic, minced
- β1 cup Braised red wineor beef broth for a different flavor

Heat oil in a large Dutch oven over medium-high heat. Add sausage and cook until browned, about 5 minutes.

Remove sausage from pot and set aside. Add onion and garlic and cook until softened, about 5 minutes.

Add bell peppers and cook for an additional 2 minutes.

Add braised red wine, scraping up browned bits from the bottom of the pot.

Add beans, sausage, flaky sea salt, and black pepper. Stir to combine.

Bring to a simmer, then reduce heat to low and cook, covered, until flavors have melded together and the stew has thickened, about 20 minutes.

Serve hot, garnished with chopped fresh herbs if desired.
