Arabian Lentil Pilaf
A flavorful and nutritious Arabian-inspired lentil dish made with warm spices and served with a side of pilaf.
Ingredients
- β1 cup Brown Lentils
- β1 cup Pilaf Rice
- β2 tablespoons Olive Oil
- β1 medium Onion
- β2 cloves Garlic
- β1 teaspoon Cumin
- β1 teaspoon Coriander
- β1/2 teaspoon Turmeric
- β1/2 teaspoon Salt
- β1/4 teaspoon Black Pepper

Heat olive oil in a large saucepan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional minute.

Add the cumin, coriander, turmeric, salt, and black pepper. Cook for 1 minute.

Add the brown lentils and 2 cups of water. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

While the lentils are cooking, prepare the pilaf. Heat 1 cup of water in a separate saucepan and bring to a boil.

Add the pilaf rice to the saucepan and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.

To serve, place a scoop of the lentil mixture on top of a bed of pilaf rice.
