Argentinian Chicken Stew
A hearty and flavorful stew originating from Argentina, made with chicken, potatoes, and vegetables.
Ingredients

- β2 large potatoes
- β1 large onion
- β3 cloves garlic
- β1 large red bell pepper
- β2 tablespoons tomato paste
- β2 cups beef broth
- β2 tablespoons olive oil

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the onion, garlic, and red bell pepper and cook until the vegetables are tender, about 5 minutes.

Add the tomato paste and cook for 1 minute, stirring constantly.
