Filipino Beef Kaldereta
A classic Filipino beef stew cooked in a rich tomato-based sauce and served with steamed rice.
Ingredients
- β1 pound beef brisket or beef shank beefcut into 1-inch cubes
- β1 large onion onionchopped
- β3 cloves garlicminced
- β2 tablespoons tomato pastecrushed
- β1 cup tomato saucehomemade or store-bought
- β2 cups beef brothhomemade or store-bought
- β2 tablespoons patisfish sauce
- β1 teaspoon black pepperfreshly ground
- β2 pieces bay leavesfresh or dried
- β2 tablespoons patisfish sauce

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef in batches until browned, about 5 minutes.

Remove the browned beef from the pot and set aside.

Add more oil if necessary, then sautΓ© the onion and garlic until the onion is translucent.

Add the tomato paste and cook, stirring constantly, for 1 minute.

Add the tomato sauce, beef broth, patis, and black pepper. Stir to combine.

Return the browned beef to the pot and bring the mixture to a boil.

Cover the pot and transfer it to the oven.

Bake for 2 1/2 hours, or until the beef is tender.

Season with salt and pepper to taste.
