Tunisian Paella Casserole
A twist on the classic Spanish dish, this casserole combines the flavors of Tunisia with the comfort of a warm and satisfying bowl.
Ingredients
- ●1 cup Tunisian Paella RiceUncooked
- ●2 cups Warm WaterFor cooking rice
- ●2 tablespoons Resinous Olive OilFor sautéing
- ●1 medium OnionDiced
- ●2 cloves GarlicMinced
- ●1 can Artichoke HeartsDrained and chopped
- ●2 Roasted Red PeppersDiced
- ●1 can ChickpeasDrained and rinsed
- ●2 tablespoons Tomato PasteDried
- ●1 teaspoon SpicesTunisian spice blend

Preheat oven to 375°F (190°C).

In a large saucepan, heat the olive oil over medium heat.

Add the onion and garlic and sauté until softened.

Add the artichoke hearts, roasted red peppers, chickpeas, tomato paste, and spices.

Add the paella rice and warm water to the saucepan.
