Smoky Dutch Stew
A hearty, comforting stew with a rich, smoky flavor from the ancho chilli. Perfect for a cold winter's day.

Ingredients
- β2 Ancho chillidried
- β500g Dutch stew beefcut into 2cm cubes
- β1 Onionchopped
- β2 Carrotpeeled and chopped
- β2 Potatopeeled and chopped
- β250ml Warm beerused to add depth of flavor
- β1 tsp Chilli powder
- β1 tsp Salt
- β1 tsp Black pepper
- β1L Water

Instructions

Heat oil in a large pot over medium heat.

Add the chopped onion and cook until softened.

Add the chopped carrot and potato, cook for 5 minutes.

Add the stew beef, cook until browned on all sides.

Add the ancho chilli, chilli powder, salt and black pepper. Cook for 1 minute.

Add the warm beer and water. Stir to combine.

Bring to the boil, then reduce heat and simmer for 1 hour.

Serve hot, garnished with chopped fresh herbs if desired.
