Spicy Thai Chicken Noodle Stir Fry
A quick and flavorful stir fry made with spicy Thai red curry paste, chicken, and noodles.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 tablespoons Thai red curry paste
- β8 ounces noodles (rice or wheat)
- β2 tablespoons vegetable oil
- β1 cup bell pepperssliced
- β1 cup onionssliced
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β2 cups chicken broth

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet.

Add the sliced onions and bell peppers to the skillet and cook until they start to soften, about 3-4 minutes.
