Lamb Stew with Mediterranean Vegetables

Ingredients
- β1.5 pounds lamb shoulder
- β1 medium onion
- β3 cloves garlic
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 can (14.5 oz) tomatoesdiced
- β2 tablespoons olive oil
- β2 tablespoons lemon juice
- β2 tablespoons tomato paste
- β1 teaspoon oregano

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the lamb shoulder and brown on all sides, about 5 minutes.

Remove the lamb from the pot and set it aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the diced tomatoes, tomato paste, lemon juice, and oregano to the pot.

Return the lamb to the pot and bring the stew to a boil.
