Freekeh Stir Fry
A quick and easy stir fry made with freekeh, whisked eggs, and your choice of protein.
Ingredients
- β1 cup Freekeh
- β2 Whisked eggsBeaten eggs for added protein
- β1 cup Your choice of protein (chicken, beef, tofu)Cooked and diced
- β2 tablespoons Vegetable oil
- β2 tablespoons Soy sauce
- β1/4 cup Chopped green onions
- β1 cup Chopped bell peppers
- β1 cup Chopped mushrooms
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add your choice of protein and cook until browned, about 3-4 minutes.

Add the chopped bell peppers and mushrooms, and cook until tender, about 4-5 minutes.

Add the cooked freekeh to the skillet and stir to combine.

Push the freekeh mixture to one side of the skillet.

Add the remaining 1 tablespoon of vegetable oil to the empty side of the skillet.

Pour in the whisked eggs and scramble them until cooked through.

Mix the eggs with the freekeh mixture.

Season with soy sauce to taste.

Serve hot, garnished with chopped green onions.
