Lemongrass Takrai Dal
A flavorful Indian-inspired dal made with lemongrass and takrai, perfect for a weeknight dinner. This comforting dish is rich in protein and fiber, making it a nutritious option for a busy evening.
Ingredients
- ●2 stalks lemongrasschopped
- ●2 cups takraimixed greens
- ●1 cup red lentilsdried
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●2 tbsp oilneutral tasting oil
- ●1 tsp turmericground
- ●1 tsp cuminground
- ●1 tsp corianderground
- ●1 tsp saltto taste

Heat oil in a large pot over medium heat.

Add chopped onion and sauté until translucent, about 5 minutes.

Add minced garlic and sauté for 1 minute.

Add chopped lemongrass and sauté for 1 minute.

Add red lentils, turmeric, cumin, coriander, and salt. Stir to combine.

Add mixed greens (takrai) and stir to combine.

Add 4 cups of water to the pot and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes or until the lentils are tender.
