Wild Irish Stew
A hearty, comforting Irish stew made with tender chunks of beef and a variety of wild mushrooms. Perfect for a chilly evening.
Ingredients
- β1 pound speckcut into 1-inch cubes
- β1 cup wild mushroomssuch as chanterelle or oyster
- β3-4 medium irish potatoespeeled and cubed
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 teaspoon caraway seedsoptional
- β2 tablespoons all-purpose flourto thicken
- β2 cups beef brothhomemade or store-bought
- β1 cup milkoptional

Heat a large pot over medium-high heat.

Add the speck and cook until browned, about 5 minutes.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the wild mushrooms and cook until tender, about 5 minutes.

Add the potatoes, caraway seeds, and flour. Cook for 1-2 minutes.

Gradually add the beef broth, whisking continuously.

Bring to a boil, then reduce the heat to medium-low and simmer for 20-25 minutes.
