Galician-Style Pork with Spicy Massaman Sauce
A twist on traditional Galician cuisine, this recipe combines the flavors of pork, Massaman curry paste, and spicy undertones.
Ingredients
- β1 kg pork shoulderboneless
- β2 tbsp traolive oil
- β2 tbsp spicy massaman curry pasteadjust to taste
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium trapotatoes, peeled and chopped
- β1 cup trawhite wine
- β2 tbsp galician salmorejooptional

1. Preheat oven to 180Β°C (350Β°F).

2. Season pork shoulder with salt and pepper.

3. Heat tra in a large Dutch oven over medium-high heat.

4. Sear pork shoulder until browned on all sides, about 5 minutes.

5. Remove pork from pot and set aside.

6. Add onion and garlic to pot and cook until softened.

7. Stir in spicy Massaman curry paste and cook for 1 minute.

8. Add potatoes, white wine, and browned pork back to pot.

9. Cover pot and transfer to preheated oven.

10. Braise for 2 1/2 hours or until pork is tender.
