Baked Spanish Fish with Xtra Cheese Ensaimada Crust

- β1/2 loaf, cut into 1-inch cubes Ensaimada Breadgluten-free
- β4 Fresh Fish Filletsany firm white fish works, such as cod or tilapia
- β1 cup, shredded Xtra Cheeseany extra-hard cheese works, such as manchego or parmesan
- β2 tbsp Olive Oiluse for brushing ensaimada cubes
- βto taste Saltuse for seasoning fish
- βto taste Black Pepperuse for seasoning fish
- β1/4 cup, chopped Fresh Parsleyuse for garnish

Preheat oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper.

Place the ensaimada bread cubes on the prepared baking sheet and brush with olive oil.
