German Braised Salmon with Rich Onions

- β1 large Onions
- β2 tbsp Xtra-virgin olive oil
- β1 cup Rich beef broth
- β1/2 cup German beer
- β2 tbsp Brown sugar
- βto taste Salt
- βto taste Black pepper
- βchopped (optional) Fresh parsley

Season the salmon fillets with salt and black pepper.

Heat the olive oil in a large Dutch oven over medium-high heat. Sear the salmon fillets for 2-3 minutes on each side, or until browned.

Remove the salmon from the pot and set aside. Reduce heat to medium and add the sliced onions to the pot.

Cook the onions for 20-25 minutes, stirring occasionally, until they are caramelized and golden brown.

Add the beef broth, beer, and brown sugar to the pot. Stir to combine and bring to a simmer.

Return the salmon to the pot and cover with a lid. Transfer to the oven and braise for 12-15 minutes, or until the salmon is cooked through.
