Golden Beetroot Curry

- β2 tablespoons xtra virgin olive oil
- β1 can silky tomato puree14.5 oz
- β1 teaspoon indian spicescurry powder, turmeric, cumin

- β1 cup water

Instructions

Preheat oven to 425Β°F (220Β°C).

Wrap the beetroot in foil and roast for 45 minutes, or until tender.

Heat oil in a pan over medium heat.
