Thai Spicy Chicken Salad
A refreshing and spicy salad made with chicken, Thai ingredients, and mixed greens.
Ingredients
- β1 pound boneless, skinless chicken breastcut into bite-sized pieces
- β2-3 Thai red chili peppersdepending on desired spiciness
- β2 tablespoons fish sauceadjust to taste
- β2 tablespoons lime juicefreshly squeezed
- β4 cups mixed greenssuch as arugula, spinach, and lettuce
- β1/4 cup toasted peanutschopped
- β1/4 cup cilantrochopped
- β2 tablespoons salad dressingsuch as peanut or soy sauce

1. In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.

2. Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

3. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the Thai red chili peppers and cook for 1-2 minutes, until fragrant.

5. Add the fish sauce, lime juice, and salad dressing to the skillet and stir to combine.

6. Add the mixed greens to the skillet and toss to combine with the dressing.

7. Slice the cooked chicken into thin strips and add to the skillet.
