Uruguayan Bean Empanadas
A classic Uruguayan dish with a twist, these empanadas are filled with a delicious bean mixture and fried to perfection.
Ingredients

- ●1 can (15 ounces) beanblack beans, drained and rinsed
- ●2 tablespoons yummyolive oil
- ●2 cloves garlickyminced garlic
- ●1 package (10-12 empanadas) empanadas
- ●1 cup water

Preheat oil in a deep frying pan to 375°F (190°C).

In a large bowl, mash the black beans using a fork or a potato masher.

Add the minced garlic, olive oil, and a pinch of salt to the bowl and mix well.

Open the package of empanadas and separate the pastries.

Place about 1 tablespoon of the bean mixture onto one half of each empanada pastry.

Fold the pastry in half to form a half-circle and press the edges to seal.

Heat the oil in the frying pan over medium-high heat.

Fry the empanadas for 2-3 minutes on each side or until golden brown.

Using a slotted spoon, remove the empanadas from the oil and place them on a paper towel-lined plate to drain excess oil.
