Malaysian Fish Satay
A traditional Malaysian dish of marinated fish skewers, grilled to perfection. Perfect for a hangover cure.
Ingredients
- β500g Fish (any white fish)Make sure to choose a firm white fish
- β2 tablespoons Malaysian Satay Marinade MixAvailable at most Asian grocery stores
- β2 tablespoons Lime juiceFreshly squeezed
- β100ml Coconut milkFull-fat coconut milk for best flavor
- β1/2 cup Yummy Peanut Sauce (store-bought or homemade)For serving
- β1 tablespoon Cure (soy sauce and brown sugar mix)For added umami flavor
- β2 tablespoons Vegetable oilFor brushing the grill

1. Cut the fish into 1-inch (2.5 cm) pieces and place in a large bowl.

2. In a small bowl, whisk together the Malaysian Satay Marinade Mix, lime juice, coconut milk, peanut sauce, and cure.

3. Pour the marinade over the fish and refrigerate for at least 30 minutes, or up to 2 hours.

4. Preheat a grill or grill pan to medium-high heat.

5. Thread the marinated fish pieces onto skewers, leaving a small space between each piece.

6. Brush the grill with vegetable oil to prevent sticking.

7. Grill the satay for 3-4 minutes per side, or until the fish is cooked through and slightly charred.

8. Serve the satay hot with additional peanut sauce for dipping.

9. Garnish with fresh cilantro and lime wedges, if desired.
