French Ginger Crepes with Zesty Filling

- β2 tbsp Lemon juiceFreshly squeezed
- β2 tbsp Zesty spreadHomemade or store-bought
- β4-6 French crepesHomemade or store-bought
- β1/4 cup ButterMelted

In a small bowl, whisk together the grated ginger, sugar, and lemon juice until well combined.

Add the zesty spread to the bowl and mix until smooth.

Heat a large skillet or crepe pan over medium heat.

Pour a small amount of melted butter into the pan and tilt to coat the surface.

Lay a crepe in the pan and cook for 30-45 seconds on each side, until lightly browned.

Repeat with the remaining crepes.

To assemble the crepes, place a cooked crepe on a flat surface and spread a tablespoon of the ginger filling down the center of the crepe.
