Middle Eastern Shakshuka
A flavorful North African dish where eggs are poached in a spicy tomato sauce. Serve with crusty bread or pita for a satisfying meal.
Ingredients
- β4 eggs
- β2 tsp middle eastern shakshuka spice mixavailable at most middle eastern markets
- β2 cups claypot tomatoes
- β1 medium onion
- β3 cloves garlic
- β2 tbsp olive oil
- β1 tsp zesty harissa
- βto taste salt
- βto taste black pepper
- βfor garnish chopped fresh parsley
Instructions

Heat the olive oil in a claypot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the shakshuka spice mix and cook for 1 minute.

Add the tomatoes and cook for 10 minutes, stirring occasionally.

Make 4 wells in the tomato mixture and crack an egg into each well.

Transfer the claypot to the oven and bake at 375Β°F (190Β°C) for 15-20 minutes, or until the eggs are cooked to your desired doneness.

Season with salt and black pepper to taste.
