Egyptian Chicken Fattoush Salad
This salad combines the flavors of Egypt with a vegetarian twist by substituting chicken with zesty chickpeas.

- β1 cup chickpeas
- β2 tbsp zestyChickpea sauce or hummus
- β2 cups flatbreadcut into 1-inch pieces
- β2 tbsp egyptianChopped fresh parsley and cilantro
- β1/4 cup Olive oil
- β2 tbsp Lemon juice
- β1 tsp Salt
- β1 tsp Pepper

1. Preheat oven to 400Β°F (200Β°C).

2. Toss flatbread with olive oil and season with salt and pepper.

3. Bake in the oven for 5-7 minutes or until crispy.

4. In a large bowl, combine chickpeas, Egyptian, zesty, salt and pepper.

5. Add the flatbread to the bowl and toss to combine.
