Fluffy Kalguksu Noodle Soup

- β8 oz kalguksu noodlesfresh or dried
- β4 cups zesty vegetable brothhomemade or store-bought
- β1 block fluffy tofufirm or soft
- β2 tbsp semolina flourfor serving
- β1 bunch green onionchopped
- β1 large sliced carrotpeeled and grated
- β1 large sliced cucumberpeeled and sliced
- β2 tbsp sesame oilfor serving
- β2 tbsp soy saucefor serving

Instructions

Bring the zesty vegetable broth to a boil in a large pot.

Add the sliced carrot and cook for 3-4 minutes.
