Slovakian Pork Roast
A traditional Slovakian dish featuring a slow-cooked roast pork with a zesty twist.
Ingredients

- ●2 teaspoons caraway seeds
- ●1 medium onion
- ●3 cloves garlic
- ●2 tablespoons zesty mustard
- ●1 cup sour cream

Preheat oven to 325°F (160°C).

Season the pork roast with salt, black pepper, and caraway seeds.

Heat oil in a large Dutch oven over medium-high heat. Sear the pork roast until browned on all sides.

Transfer the pork roast to a large baking dish and roast in the preheated oven for 2 1/2 hours, or until tender.

While the pork roast is cooking, sauté the onion and garlic in a pan until softened.

Add the zesty mustard and sour cream to the pan, stirring to combine.

Remove the pork roast from the oven and brush the zesty mustard-sour cream mixture over the top.

Return the pork roast to the oven and continue cooking for an additional 10-15 minutes.
