Saudi Arabian Date Pudding
A rich and creamy dessert inspired by Saudi Arabian cuisine, featuring velvety date pudding and a hint of zesty flavor.
Ingredients

- β1 can coconut milkfull-fat
- β1/2 cup sugar
- β2 tablespoons cornstarch
- β1 tablespoon zestfrom 1 orange
- β1 teaspoon arabian coffeeoptional
- βpinch salt

In a small bowl, whisk together the cornstarch and a splash of coconut milk until smooth.

In a medium saucepan, combine the remaining coconut milk, sugar, and cornstarch mixture.

Cook over medium heat, stirring constantly, until the mixture comes to a boil.

Reduce the heat to low and simmer for 5 minutes, or until the pudding thickens.

Remove from heat and stir in the date puree and arabian coffee (if using).
