Spanish Courgette Fritters
A crispy Spanish-style fritter recipe using courgette, great as a side dish or snack.
Ingredients

- β1 cup all-purpose flour
- β1 tsp baking powder
- β1/4 tsp salt
- β1 egg
- β1 beaten eggfor egg wash
- β1 cup vegetable oil

1. Grate the courgette into a bowl.

2. In a separate bowl, whisk together the flour, baking powder, and salt.

3. Add the dry ingredients to the courgette and mix well.

4. Beat the egg in a separate bowl.

5. Add the beaten egg to the courgette mixture and mix until a thick batter forms.

6. Heat the vegetable oil in a deep frying pan to 180Β°C (350Β°F).

7. Using a spoon, drop small amounts of the batter into the hot oil.
