Vietnamese Stir Fry with Herbs
A flavorful and easy-to-make vegetarian stir fry recipe inspired by Vietnamese cuisine, perfect for a quick dinner.
Ingredients

- β1 medium Onionthinly sliced
- β1 medium Bell pepperthinly sliced
- β2 medium Carrotspeeled and grated
- β1 can Bamboo shootsdrained and sliced
- β1/4 cup Fresh mint leaveschopped
- β1/4 cup Fresh basil leaveschopped
- β2 cloves Garlicminced
- β1 tablespoon Gingergrated
- β2 tablespoons Stir-fry sauce

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced onion and bell pepper, and stir-fry until they start to soften.

Add the grated carrots, bamboo shoots, minced garlic, and grated ginger.

Stir-fry for another 2-3 minutes, until the vegetables are tender-crisp.

Add the chopped fresh mint leaves and basil leaves, and stir-fry for 1 minute.

Pour in the stir-fry sauce, and stir-fry for another minute, until the sauce has thickened.
