Bitter Uruguayan Beef Empanadas
A twist on traditional empanadas, featuring Uruguayan beef and a hint of bitter flavors. Perfect for a dinner or snack.
Ingredients
- β1 pound Ground beefUruguayan beef or substitute with 80/20 ground beef
- β1/4 cup, chopped Bitter greenssuch as arugula or kale
- β2 tablespoons Mirinsweet Japanese cooking wine
- β1 package, thawed Empanada doughhomemade or store-bought
- βto taste Salt
- βto taste Black pepper
- βas needed Waterfor brushing empanada dough

Preheat oven to 375Β°F (190Β°C).

In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.

Add the chopped bitter greens to the skillet and cook until wilted.

Stir in the mirin and cook for an additional minute.

Season the beef mixture with salt and black pepper to taste.

Roll out the empanada dough to a thickness of about 1/8 inch.

Use a cookie cutter or the rim of a glass to cut out circles of dough.

Place a tablespoon or two of the beef mixture in the center of each dough circle.

Fold the dough over the filling to form a half-circle shape, pressing the edges together to seal.

Brush the tops of the empanadas with water and bake for 20-25 minutes, or until golden brown.
